Sparkling Cabernet Shiraz - Pickup OnlyMade from a 50/50 blend of the two varieties the grapes were picked at maturity and fermented separately on their skins prior to pressing and then blending. Fermentation was as for standard table wine in open fermenters and pumped over twice daily to extract color and flavor from the skins. Secondary fermentation is undertaken in the bottle [this gives the wine its bubbles] with the bottles laid down in the cellar for a minimum of 2 years prior to riddling and re sealing of the bottles. Riddling moves the yeast sediment to the neck of the bottle which is then removed by dis-gorging. The wine apart from its fine bubbles, is a dry style with typical Cabernet and Shiraz characters.
