Riesling 2009Riesling is the noble wine grape variety of Germany. A cool climate variety, the grapes for this wine are sourced from Mount Barker in the South of WA. Because it is difficult to get grapes ripe in Germany sugar is often added [which is illegal in Australia] and their wines are high in acid and low in alcohol. We have tried to emulate this style by hand picking the grapes when slightly green at a Beaume of 12 and a pH of 3.0 The grapes are transported to Perth overnight on the day they are picked – a long day for us. The following morning the grapes are destemmed, lightly crushed and the lightly pressed in an air bag press [resulting in low phenolic and solids extraction]. Fermentation follows with an aromatic commercial yeast strain at 15’C. Immediately following fermentation sulphur dioxide [an anti oxidant and preservative] is added in addition to bentonite [to remove protein which may precipitate in the wine to produce a protein haze] and milk powder [a clarifying agent]. The wine is then filtered with a cross flow filter and then bottled in a ‘reisling bottle’ under a screw cap seal [no oxidation or cork taint]. The wine has intense lime like aromas and flavor with sharp acidity and a lengthy palate with a persistent after taste. Alcohol content 10% $29.00 Quantity: |
