Fortified Shiraz - Pickup OnlyThis wine began its journey in 1993 when our first Fortified Shiraz was produced. The grapes were picked at full maturity to give high sugar levels and intense flavors. Fermentation began on skins to add color and flavor to the wine. At 10 Beaume [about 2/3rd way through fermentation] the grapes were pressed and the fementing juice transferred to a stainless steel tank. Sulphur dioxide and grape spirit was then added to arrest fermentation leaving the wine with high alcohol levels and a high sugar content to give sweetness. The wine was left in tank for a few weeks to allow the solids and dead yeast to settle out and then placed in 10 year old French oak barrels. Every few years a new batch was fermented. The wine in barrels was pumped into a tank and the new fortified wine added. Some was taken off for bottling and the remainder transferred back to barrels. A type of modified ‘solero system’. The resultant wine is sweet, moderately high in alcohol with intense concentrated Shiraz aromas and flavor. It has a smooth, rounded mouth feel with a lengthy aftertaste.
