Vintage Fortified Shiraz 2006Picked at full maturity [high sugar & mature fruit characters] the juice was crushed, destemmed and then fermented on skins [to extract colour and flavour as well as tannins]. Half way through fermentation the fermentation process was stopped by the addition of alcohol [96 % grape spirit] and sulphur. This resulted in a wine with sweetness, a fruity palate and high alcohol giving a full warm lengthy mouth feel The wine was aged for four years in stainless steel before filtration and bottling.
