Cabernet 20062006 Cabernet Cabernet is one of the famous French red varieties from the picturess Cabernet is a vigorous variety with moderate cropping levels. The vines are spur pruned by hand, machine trimmed in Our Cabernet is a blend of Cabernet Sauvignon with 20% Cabernet Franc. Fermented on skins to dryness the juice was pumped over twice daily to aid color & flavor extraction from the skins. At completion of fermentation the grapes were gently pressed in an air bag press then the wine transferred to a tank where it was inoculated with a bacteria to undergo a malo lactic fermentation. This process converts malic acid to the softer lactic acid giving a softer mouth feel as well as altering the flavor profile. The wine stays in tank for six weeks before being transferred to a mixture of new and once used French & American oak where it stayed to 36 months. Sulphur is added & again every 6 months when the barrels are topped up. The wine has pleasant but subtle oak tones which complement dark berry & chocolate aromas & taste. The palate is full & lengthy with good tannin structure. Sealed with a screw cap the wine will age with time while retaining it’s youthfulness. Alcohol content 14.0% $24.00 Quantity: |
